Why does Equifax have my data?

It doesn’t matter if you have or have never signed up personally to Equifax. As a Canadian with access to credit, Equifax would have collected your information from banks and other lenders. Equifax gives you a credit score based on this information, which lenders and other companies use to assess whether or not to lend you money or allow you to open a new account (such as a new cellular account).
